Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.

As a kid, I usually ate school lunches. My single, working mother was raising five boys and didn’t have much time for making lunches. I bought my lunch because it was convenient for my mother. When I did take a packed lunch, my favorite thing to find was bologna, cheese, and mayo sandwiches. The strangest thing I saw on the school menu was tuna sandwiches. I tried it and ended up loving tuna.

If I could create one school lunch item from scratch, it would be peanut butter and chocolate bars. The ultimate school lunch menu should include a variety from around the world so kids can taste more than just meat and potatoes. It’s important to ensure a well-balanced and nutritious meal using the basic five food groups.

The lunch packaging makes a difference; the presentation makes it more appealing.

I would like to see beef short ribs, greens with ginger dressing, white rice, tuna poke, and charred octopus in a dinner box.
